How to Make Twisted Doughnuts (تاتلىق تۈرۈم _ئەشمە قۇيماق)

Let the dough twist, twist, twist , let it dance in the air!! The hot steam from the freshly fried donuts bring me back to my childhood. When I was a kid, my mum bought it from the street vendors or sometimes, she made it at home, especially in the winter... If you followed me on my YouTube Uyghur food channel, you know that I made twisted donuts last weekend : ) I was so happy because of these yummy and tasty sweet treats. Believe me or not, making these doughnuts is very fun and easy!  

Twisted doughnuts are eaten as snack and sometimes we combine it with milk tea, soups or salads.

INGREDIENTS
all purpose flour 300 gr
yeast 3 gr
sugar 30 gr
egg 1x
water 120ml
for the dough 30ml heated oil (I used Sunflower oil)
baking soda 1tsp
sunflower oil for frying (you could also use other vegetable oil as corn oil)


INSTRUCTIONS

  1. Add  flour, yeast, sugar, egg and water to the mixing bowl, knead them to make a smooth dough. (I made a blogpost about How to Make Dough) Cover it with a damp towel or plastic wrap and set it aside in room temperature to rise for 2 to 4 hours, or until it has doubled in size. (my first batch took only  2 hours)

    When the dough has risen,  sprinkle the baking soda and a hand of flour over the top of the dough.

  2. Heat up 30 ml Sunflower oil and add this hot oil on top of the dough. In this way we'll pre-cook the dough a little bit.

    Mix the ingredients immediately with a spoon, because the dough is very hot, when it's cooled down, knead the dough continuously by hand to make a smooth dough again. Cover it with a towel and set it aside in room temperature for about 10 min.

  3. Divide the rested dough in 7 even pieces. Take a piece of dough. Grab and roll it out on the working surface so it forms a smooth rope of approximately 28 cm long and 2 cm thick. Twist the dough: keep the rope straight, move one hand lightly upward and the other hand downward(see picture below), you'll feel the tension in the rope building, repeat at least two times. Pick up the ends and lift the twisted rope off the working surface. Bring the ends together, if all is well the rope will twist together by itself. If you need to (I did) with fingers twist it more to make 3-4 twists in total. Set the twisted donuts aside. Pinch the ends together so they don't open during the frying. Cover the donuts with a lid. Repeat with the rest of the dough pieces.  Every 5-10min, gently flip the doughnuts over so the bottoms of the dough don't get flat, let these ''little cuties'' rise evenly for about 15-30 min.

4. To fry the doughnuts: Heat up the oil thoroughly in a deep pan over medium-high heat (the oil is hot when you see light smoke from the surface of oil and when you put wooden sticks in the oil, it bubbles hard.) Turn off the fire and let the oil cool down. Approximately 2-3 min. Otherwise the donuts will burn in the hot oil. To check the right temperature for frying the donuts: put in the wooden chopsticks again and if it has even, light and small bubbles, the oil is ready for frying. Now turn on the smallest fire to keep the oil hot. Gently insert 3-4 doughnuts into the pan. Fry evenly each side for about 2min, total 4-5 min. until you'll get golden brown beautiful cute doughnuts! Repeat with the rest. 
5. Serve: hot/warm. Sprinkle some powdered sugar on top and enjoy!!

NOTES
*
Temperature can affect the rise time. Allow the dough to rise until doubled in size. Room temperature is the best for resting the dough.
* The temperature is also a factor that affects water quantity. You may use more or less water in the flour. 

Storage
*
You can freeze the doughnuts for up to a month. To rejuvenate the donuts, take them out the freezer, let them defrost before serving.
