How to Make Uyghur Home-style Chili Sauce (ئۆي ياغمۇچى)

As a child I loved to listen to the stories about my grandmother’s childhood: A long time ago, my grandmother, her sisters and brothers didn't have enough food, let alone oil or meat in their meals. Because oil and meat were the most expensive ingredients. If ever they had the luxury to add extra oil to the food, it would definitely be
this homemade chili sauce that they would put right next to the meals, especially next to Laghman.
The rough ingredients of this sauce
function as meat substitution. This beautiful deep red sauce, brings out unexpected flavours and lifts the meal to a whole other level which will have a characteristic and powerful aromatic flavour!!

INGREDIENTS
Oil 100ml
one bulb of garlic
Hot red chili pepper 1x
Ginger 21gr
White sesame 1tsp
Black sesame 1tsp
Sugar 1/3 tsp
Black pepper 1/2 tsp
White pepper 1/2 tsp
Cumin 1/2 tsp
Black rice vinegar 50ml
Salt 1/3 tsp
Chili powder 2tsp
INSTRUCTIONS
Mince the garlic finely, hot red chili pepper and ginger.
Heat the sauce pan over medium-high heat, add the oil. When you see light smoke, turn off the fire, remove it from the heat, let it cool down a bit so you don't burn the ingredients (approximately 20 sec). Still off the heat, add the garlic, red hot chili pepper and ginger. Stir and fry them lightly golden brown in approximately 1 min. Then add the black sesame, white sesame, chili flakes and spices, mix shortly for 10 sec. Add black rice vinegar to balance the flavours. Let it cool off completely.
Give it a good mix before enjoying.
Serve: used as topping for Laghman. Also the oil of the sauce is great for cooking other recipes because it’s already full of flavour
TIPS
* Use a sauce pan, the depth of the pan prevents the oil from splattering. Be gentle when you put ingredients in the hot oil.
* Storage: the sauce can be stored in a glass jar in the fridge for at least a month. (In our home the sauce never makes it to a month, because we add it to everything, it’s so delicious!)
